Killarney Aimsir, dry cider 10oz KIllarney Aimisir - 8.5% Laporte, PA Crisp, dry and complex with lots of elegance. Ida Red apples are blended with Cortland and Jonagold (a cross between the mellow Golden Delicious and tart Jonathan). Aimshir (AM-shir) means weather or season and refers to the natural variation in the apples, and even the orchards that occur during the year. Killarney Cidery focuses on small batches that harness the best from the peak of what nature offers. 9

Balanced, not too much acid, and it can be drunk day long and night late. Roger Wilkins told us ‘the greatest cider drinkers are in the churchyard pushing up daisies. Tequila is essentially a subset of Mezcal made primarily in Jalisco and 4 other states. Its is made exclusively with Agave Tequilina or blue webber agave and has several production and aging requirements.

Mezcal is an ancient agave spirit made throughout the country of Mexico. It's cultural and production center lies in the state of Oaxaca, but it can officially be made in 9 states (unofficially several more). While production methods vary wildly, generally Mezcal requires roasting the agave in underground pits, spontaneous fermentation and double distillation. While it certainly can have smoky notes, many of the wild agaves are done with a lighter touch to protect the true flavor of the plants
Espadin (Agave Angustifolia) is the most widely grown agave (about 90%). They are generally farmed and while there are huge differences in flavor due to the location, maker and production techniques, most espadin mezcals are lighter and less dense in flavor than the silvestre or wild agaves. espadin typically takes from 8 - 10 years to mature.
At once the past and the future of mezcal production, esembles are made by combining more than one type of agave due to proximity, maturity, cooking technique and flavor. Typically the different agaves are harvested, roasted, fermented and distilled all together, though many variations exist, of course. This style of production can offer a more efficient and sustainable lifestyle for the mezcaleros and also the agave plants themselves.
