Allagash Belfius, sour saison Allagash Belfius - 6.7% Portland, Maine - A blend of a 3 year old coolship beer (a historic brewing tool that allows the beer to be inoculated with wild yeast and other microbiota) and their saison, a dry ale defined by its notes of citrus and peppery spice. Blended together, they create a golden beer with an herbal aroma that contains both spice and tart fruit. Its taste is one of restrained sourness rounded out by a hint of oak. 21

With its broad serrated leaves (or pencas) often bearing black tips. In the local Zapotec dialects, this agave is also known as "Doba-daan" or "Dob-daiin". This mezcal has a medium-light smoke profile, lots of herbaceous notes and slight heat on the finish. 20
